Strawberry Banana Oat Muffins

Here is a recipe to get rid of the last of those summer strawberries. Hope you enjoy!













Ingredients:

  • 2 c. flour
  • 1 tsp. baking soda
  • 1/8 tsp salt
  • 1 c. sugar
  • 1/2 c. vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 bananas, mashed
  • 2 c. fresh chopped strawberries
Instructions:
  1. Preheat oven to 325 degrees. In a large bowl, mix sugar and oil.
  2. Add eggs, vanilla and mashed banana. Mix again.
  3. Add four, baking soda, and salt. Mix until combined. Fold in strawberries with large spoon.
  4. Line a muffin tin with paper liners and fill them using a large ice cream scoop (until mostly full).
  5. Bake for 25 mins or until toothpick comes out clean. Cool on wire rack and enjoy!

Fall Recipes & Pumpkin Spice Bread

I decided to kick off this beautiful fall weather by giving you all some recipes I've been loving. Baking is one of my favorite things to do and I've found some great recipes off of Pinterest.

Starbucks Pumpkin Loaf is seriously so addicting. But since I can't eat their gluten-filled deliciousness, I thought I'd find my own version of it. Hope you like it!





















Ingredients:

  • 3 eggs
  • 1 c. sugar
  • 1/4 c. brown sugar
  • 1 tsp vanilla extract
  • 1 c. pumpkin puree
  • 1/3 c. vegetable oil
  • 1 1/2 c. gluten fre flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice

Instructions:

  1. Preheat oven to 350. Line a 9x5 loaf pan with parchment paper and set aside.
  2. In a large bowl, beat eggs, sugars and vanilla.
  3. Add in pumpkin puree and oil. Beat until combined.
  4. Add all dry ingredients and stir until combined. 
  5. Spoon batter into lined pan and bake for 40-50 mins or until a toothpick comes out clean. Remove and let cool for 10 minutes before slicing and serving.

Summer's End

When the summer ends, we wrap up the slow pace of hot days, warm nights, pool parties and spending time with dear friends. Then comes the craziness of Fall.
