Ingredients:
- 2 c. flour
- 1 tsp. baking soda
- 1/8 tsp salt
- 1 c. sugar
- 1/2 c. vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 3 bananas, mashed
- 2 c. fresh chopped strawberries
Instructions:
- Preheat oven to 325 degrees. In a large bowl, mix sugar and oil.
- Add eggs, vanilla and mashed banana. Mix again.
- Add four, baking soda, and salt. Mix until combined. Fold in strawberries with large spoon.
- Line a muffin tin with paper liners and fill them using a large ice cream scoop (until mostly full).
- Bake for 25 mins or until toothpick comes out clean. Cool on wire rack and enjoy!
