Starbucks Pumpkin Loaf is seriously so addicting. But since I can't eat their gluten-filled deliciousness, I thought I'd find my own version of it. Hope you like it!
Ingredients:
- 3 eggs
- 1 c. sugar
- 1/4 c. brown sugar
- 1 tsp vanilla extract
- 1 c. pumpkin puree
- 1/3 c. vegetable oil
- 1 1/2 c. gluten fre flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp allspice
Instructions:
- Preheat oven to 350. Line a 9x5 loaf pan with parchment paper and set aside.
- In a large bowl, beat eggs, sugars and vanilla.
- Add in pumpkin puree and oil. Beat until combined.
- Add all dry ingredients and stir until combined.
- Spoon batter into lined pan and bake for 40-50 mins or until a toothpick comes out clean. Remove and let cool for 10 minutes before slicing and serving.
