Pumpkin Banana Muffins

Pumpkin, pumpkin and more pumpkin. If you haven't realized by now, I love pumpkin. And since we always have bananas in our house, I thought I'd try this recipe out. Hope you like it!



Ingredients:

  • 1/4 c. butter
  • 2 bananas
  • 1 c. sugar
  • 3/4 c. pumpkin puree
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 tsp pumpkin spice
  • 1 tsp cinnamon
  • 1 1/2 c. flour
  • 1/2 tsp salt
  • 1 tsp baking soda
Instructions:
  1. Preheat oven to 425 degrees. Line a 12 count muffin try with liners.
  2. In a large bowl, microwave butter until melted, then add bananas and mash. Add sugar and pumpkin, stir well.
  3. Stir in egg and vanilla.
  4. Add pumpkin spice, cinnamon, flour, salt and baking soda. Mix until combined.
  5. Spoon evenly into muffin tin.
  6. Bake for 5 minutes at 425 degrees. Keeping tray in oven, reduce heat to 350 degrees and bake for 15-20 mins. Enjoy!
