Pumpkin Chocolate Chip Cookies

Here is another pumpkin favorite of ours. This is a recipe I've used since early high school. My family loves having these for Thanksgiving and it is so simple!



Ingredients:

  • 1 c. pumpkin puree
  • 1 c. granulated sugar
  • 1/2 c. vegetable oil
  • 1 tsp vanilla
  • 1 egg
  • 2 c. flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp milk
  • 1 c. semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 375 degrees. Lightly grease cookie sheet.
  2. In large bowl, mix pumpkin, sugar, oil, vanilla, and egg. Mix until well combined.
  3. In another bowl, mix flour, baking powder, cinnamon and salt. In a small bowl, dissolve baking soda in milk. Add both to pumpkin mixture.
  4. Mix well. Stir in chocolate chips until evenly combined.
  5. Use medium ice cream scoop to drop mounds of cookie dough onto prepared cookie sheets.
  6. Bake 10-12 minutes. Cool slightly before moving cookies to a wire rack to cool completely.
